Sometimes due to time constraint I will resort to cooking just one type of food - usually it is either fried mee hoon, yellow mee, kuey teow or just fried rice. To make up the absence of other dishes I will add lots of vegetables together with at least one source of protein (either sliced fish or chicken) into my one pot meal. This simple and fast meal is loaded with vegetables as you see in the picture. I'm glad that my three children and hubby loves vegetables as much as I do.
